Ingredients
3very ripe bananas, medium or large
½cupunsalted butter, 8 Tbsp, room temperature
¾cupgranulated sugar
2large eggs, slightly beaten
1½cupsall-purpose flour
1tspbaking soda
½tspsalt
½tspvanilla extract
1cupcoarsely chopped walnuts, lightly toasted
½cupraisins
Instructions
Preheat oven to 350℉. Grease and lightly flour a loaf pan 9¼ L x 5¼ W x 2¾ D
In a large mixing bowl, cream together ½ cup butter and ¾ sugar,.
Mash bananas with a fork until the consistency of chunky applesauce. Add mashed bananas to batter along with beaten eggs, mix until well blended.
In a separate bowl, whisk together 1½ of cups flour, 1 tsp of baking soda, and ½ tsp of salt and add to the batter.
Add ½ of vanilla extract and fold in chopped walnuts and raisins. Pour into prepared pan. Bake at 350℉ for 55-60 minutes or until toothpick inserted into the center comes out clean. Let banana bread rest for 10 minutes before transferring to wire rack to cool.
