Nutty Banana Bread

This Banana Bread Recipe is loaded with ripe bananas, sweet golden raisins, and lightly toasted walnuts. This bread is one of our favorite banana bread recipes. It tastes even better with a touch of nutmeg.

Ingredients

  • 3 very ripe bananas, medium or large
  • ½ cup unsalted butter, 8 Tbsp, room temperature
  • ¾ cup granulated sugar
  • 2 large eggs, slightly beaten
  • cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp vanilla extract
  • 1 cup coarsely chopped walnuts, lightly toasted
  • ½ cup raisins

Instructions

  • Preheat oven to 350℉. Grease and lightly flour a loaf pan 9¼ L x 5¼ W x 2¾ D
  • In a large mixing bowl, cream together ½ cup butter and ¾ sugar,.
  • Mash bananas with a fork until the consistency of chunky applesauce. Add mashed bananas to batter along with beaten eggs, mix until well blended.
  • In a separate bowl, whisk together 1½ of cups flour, 1 tsp of baking soda, and ½ tsp of salt and add to the batter.
  • Add ½ of vanilla extract and fold in chopped walnuts and raisins. Pour into prepared pan. Bake at 350℉ for 55-60 minutes or until toothpick inserted into the center comes out clean. Let banana bread rest for 10 minutes before transferring to wire rack to cool.
