Ingredients to Make Sweet Potato Bread

These ingredients are used to make the sweet potato bread: 1 1/2 cups baked, mashed sweet potato, cooled, 1/2 cup vegetable oil, 1 cup light, packed brown sugar, 2 tbsp maple syrup, 1/4 cup full-fat, whole sour cream, 2 large eggs, 1 tsp vanilla extract, 1 tsp baking soda, 1 1/2 tsp ground cinnamon, 3/4 teaspoon ground ginger, 1/2 tsp ground nutmeg, 1/4 tsp salt, 1 1/2 cups all-purpose flour.

Steps to Make the Sweet Potato Bread

Baking this dessert bread is very easy. All the ingredients are added to one bowl and mixed well to create the perfect batter.

Step 1

Preheat the oven to 350 degrees F. Grease a 9-inch x 5-inch x 2.75-inch loaf pan.

Step 2

In a large mixing bowl, whisk mashed sweet potato, vegetable oil, brown sugar, maple syrup, sour cream, eggs, and vanilla.

Step 3

Whisk in the baking soda, ground cinnamon, ground ginger, ground nutmeg, and salt.

Step 4

Add in the all-purpose flour and whisk.

Step 5

Pour the batter into the prepared loaf pan. Bake on lower rack 30-40 minutes. Move the pan to the top rack and bake for an additional 15-20 minutes, or until a toothpick inserted in the middle comes out clean.

Step 6

Allow bread to cool completely.

  2. 2. Grease or spray a 9-inch x 5-inch loaf pan and line with parchment paper or loaf pan liner paper.
  3. 3. In a large bowl, whisk together the mashed potato, canola oil, brown sugar, maple syrup, sour cream, eggs, and vanilla extract. The mixture will have small pieces of sweet potato, but that is fine.
  4. 4. Whisk in the baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt. Stir until fully incorporated.
  5. 5. Whisk in the flour.
  6. 6. Pour the batter into the prepared loaf pan. Bake for 55-60 minutes.
  7. 7. Remove from oven and allow loaf to cool completely. Slice and enjoy.

Note

Baked Sweet Potato: To make the mashed sweet potato, you need about 2 medium sweet potatoes or 1 extra-large sweet potato. Preheat oven to 425 degrees F. (I used my air fryer's bake function). Wash potatoes prick with a fork multiple times. Bake for 45 minutes to 1 hour or until a fork easily pricks into the potatoes. Allow to cool for about 15 minutes, then peel off the skin and mash. Make sure it measures 1 1/2 cups. Allow to cool complete before using in the recipe.
