Description

The rice bread is made from very ripe plantains, warm tropical spices, and rice meal, and is similar to banana bread. The first taste of the rice bread will leave you wanting more.

Instructions

  1. 1. Preheat oven to 350 degrees F. Grease a 9-nch x 2.5-inch round cake pan.
  2. 2. Whisk together the 1 cup cream of rice, 1/2 cup sugar, 3/4 tsp baking soda, 1/2 tsp nutmeg and 1/2 tsp salt.
  3. 3. Add to the dry ingredients 1/4 cup vegetable oil, 1/4 cup water, 1 egg, 1/2 tbsp vanilla extract, 1/4 cup whole milk, 1 tbsp fresh ground ginger, 2 cups mashed ripe plantains, whisk well until all ingredients are fully combined.
  4. 4. Pour batter into prepared baking pan. Bake on lower rack at 350 degrees for 20-25 minutes. Place on top rack and bake 10-15 minutes or until top will brown and toothpick inserted in middle comes out clean.
  5. 5. Remove from oven. Let cool complete. Slice and serve.
